COFFEE BRAISED SHORT RIBS
Serves 6Ingredients
- 3 lbs boneless beef short ribs, trimmed of excess fat, cut into ¾" cubes
- 1T kosher salt
- 1 1/2t pepper
- 2 T oil
- 1 cup dry red wine
- 1 T minced garlic
- ¼ cup tomato paste
- ¾ cup strong coffee
- 1 ½ cups beef stock
- ¼ cup kecap manis (sweet soy sauce)
- ½ onion, cut into 2 pieces
- 1 stalk celery, cut into 1" long chunks
- 1 small carrot, peeled and chopped into 1" long chunks
Directions
Pre-heat oven to 350°. Salt and pepper meat. Place garlic, tomato paste, coffee, and stock in blender and blend until smooth. About 5 seconds.
Heat oil in large pot and brown meat on all sides. Drain off grease and add wine. Boil for a minute. Pour coffee mixture over meat. Add kecap manis, onion, celery, and carrot. Reduce heat, cover, and simmer for 1 ½ to 2 hours until meat is tender. Add more water if liquid is getting too thick. Serve with egg noodles or white rice, and a spoonful of horseradish cream.
Horseradish Cream
- ½ cup whipping cream
- ½ t sugar
- ½ t kosher salt
- 1 T prepared horseradish
Blend all ingredients for about 4 seconds. Cream should start to thicken.
