Slow Cooker-Chili Con Carne
Serves 6 to 8Ingredients
- 2 lbs lean ground beef
- 2 large cloves garlic, minced
- 1 1/2t celery seed
- 2 large onions, finely chopped
- 2 T chili powder
- 1/2 t dried oregano
- 1/2 t cayenne pepper
- 1 28-oz can diced tomatoes, with juice
- 1 19-oz can red kidney beans, drained and rinsed
- 2 T cocoa powder
- 1 T brown sugar
- 4 whole cloves
- 1 t white vinegar
- 1/2 t black pepper
Directions
In a large skillet over medium heat, combine ground beef, garlic, celery seed and onions. Cook until vegetables are tender and meat is no longer pink. Drain any grease from meat. Add chili powder, oregano and cayenne; cook 1 minute longer. Transfer mixture to a slow cooker.
Add tomatoes, kidney beans, cocoa, sugar, cloves, vinegar and pepper; stir to combine. Cover and cook on Low for 6 to 8 hours or on High for 3 to 4 hours. Season to taste with saltand pepper.
